Recipe that works for me: cook 1:1 (by weight) sugar and water for ~1h at 80-90°C with the juice of one lemon per litre water, then boil it down to ~118°C (gives a light golden color, a thin honey like viscosity).

In either case golden syrup only has a shelf life of about two years; or one year after being opened, and it should be refrigerated after opening. The granulation could be fixed by reheating but the black is not worth the risk. Share.

Agave syrup is almost entirely fructose, while golden syrup is a mixture of fructose and glucose. Fructose tastes sweeter, so agave syrup may oversweeten if you use it 1:1 as a substitute. Share.

It is also ~15% water and, I believe, contains NaCl due to inverting the portion of sucrose with HCl, then neutralizing it with NaOH. Surely, the toffee flavor comes from impurities. 2017年3月9日 · The secret is not to get the lip of the tin dirty. Specifically, do not pour the Golden Syrup out of the tin. Use a spoon or a knife to get out the amount you need. Even if you need to fill a spoon ten times that is quicker than pouring and then having to clean the lip. In some parts of the world it is sold in jars.
