2021年11月14日 · Agreed, this has definitely reinforced how useful they are! - the Chef John approach is 500 degrees for 5mins/lb, /turn off/ and wait 2 hours. So either I need to front load that time (5.5min/lb?) or keep the oven warmer during the 2h.

For actual prime rib before and it came out amazing. Can I adapt this for the cut I have currently, and still get a good quality result?

2021年2月11日 · That said, it looks a little lighter in color on the outside and redder with no gray ring on the inside than previous prime rib I've had, and what's in the pictures from that recipe/method from Chef John. I couldn't say whether it's just rare or it needs more cooking. I don't think it would be ruined either way.

2023年12月18日 · I am going to cook it with a probe. I saw a tip on americas test kitchen if your roast isn’t where you’d like it temp wise, heat the oven to 200. Leave it for 5 minutes then turn the oven off and wait for it to come up in temp to where you’d like it. I think I’ll go as instructed by chef John then try to bring it up if needed.
