They don't farm out their production and the factories produce only Wusthof. Like pots and pans, an 8" cooks and paring knife will work 95% of the time. Kuan.

2011年2月15日 · Why? Because carbon steel pans have sides that slope more sharply than others. The nominal size, however, is based on an across-the-rim measurement. Thus, an 8" deBuyer has a cooking surface that's only 5 1/2 inches. It would be difficult to get even a small steak in that size pan. Day-in and day-out, I find the 10" and 12" pans to be most useful.

2021年11月9日 · GreenPan ceramic is the current ceramic non-stick recommended by Cook's Illustrated/America's Test Kitchen, though they prefer regular non-stick over the ceramic. The Green Pan is pretty pricey but gets pretty good reviews. And it can take more heat 500-600 degrees than the ceramic I'm trying.

Copper is nice since it conducts heat considerably better then stainless, but it's not totally essential. If your boiling sugar on a regular basis, I would recommend copper, but if it's casual, a good stainless pot will suffice, such as one from Update.

They have french "lyonesse" shape & handle, so it's very convenient to flip eggs with tossing, fold omelets and slide cooked eggs off the pan.

I went through 4 sets before finally getting some decent pans, and that fourth set came to me with the handles punched through the box, same bad packaging.
