My question is: what internal temp to take the roast out? I know when cooking "normal" I should expect the internal temp to raise 5-7 degrees or so while resting.

Then remove and wrap until grill cools to 225, once Lower temp is hit add super smoke, put it back on until desired internal. I will reverse sear a prime rib steak. 2013年5月24日 · The last prime rib I did, I ran the smoker at 265*-275* and it had a pretty good bark on it, but not like if it had been seared or run under the broiler. Before I built my mini- wsm I used to use my gas bbq to sear whatever I smoked in my gas smoker and that worked good too.

I watched the video and plan to follow Chef Burrell's recipe for the 9 1/2 lb. prime rib to accompany my 9 1/2 lb. tenderloin roast. Mashed potatoes. Green beans. Fresh horseradish. Blue cheese. I cook my prime rib at 225 and the 3-rib roast I usually get takes about 5ish hours. 175 will work fine but take a lot longer. Going up doesn’t appreciably affect the final product and is faster. I finish it with a torch on a big cast iron skillet set to high. My wife helps keep the roast turning constantly while I torch the shit out of it.

2023年11月11日 · I do a butter with salt pepper and herb de provenance (the mix with lavender) the way you described but I cook it with chef John's technique. Opposite of a reverse sear, Basically it goes in a red hot oven for x minutes depending on weight, then the oven goes off and the door stays closed for a while.
