Shrimp of the Woods happen when Honey mushrooms (Armillaria) get parasitized by Entoloma abortivum, turning the honey mushrooms in these fleshy white galls without distinctive gills underneath. They have a mild flavor so I decided to boil them up in a mini cajun-style “shrimp” boil. They had a mild mushroom flavor and the texture if perfectly cooked shrimp.
